Chef Paul Gamauf
Born in Vienna, Paul Gamauf showed a dedication to sustainability early in his career as Sous Chef at the vegetarian-vegan and Michelin-starred restaurant Tian, where he worked for almost eight years before moving to Silvio Nickol at Palais Coburg.
Now at EDVARD, he focuses on his love of nature and its products, collecting, pickling and fermenting his own ingredients and selecting small-batch producers who share his passion for regionality and seasonality as well as quality and sustainability. With a deep respect for both nature and the culinary arts, Chef Paul applies a low-waste approach to his creations, ensuring every part of each ingredient is used thoughtfully and creatively.
